• 200g smoked back bacon rashers, diced
• 2 soft brown rolls, torn into bite-sized pieces
• 2 tbsp extra virgin olive oil
• 1 large cos lettuce, washed,
dried and torn into bite-sized pieces
• 2 large, ripe Hass avocados
• Black pepper
For the Mustard Dressing:
• 1 tbsp wholegrain mustard
• 1 tbsp white balsamic vinegar
• 5 tbsp extra virgin olive oil
• 1 clove garlic, crushed
• A pinch of sugar
Bacon, Mustard & Avocado Salad with Crunchy Rustic Croutons
Ingredients (Serves 2):

Method:
Preheat the oven to 200°C/ 400°F/ gas mark 6.
Place the torn rolls in a roasting tin and drizzle over the oil. Season with black pepper and toss well to coat. Place in the oven for approx. 8 minutes or until golden and crisp.
In a non-stick frying pan, fry the bacon over a medium heat, stirring until golden and crisp. Remove the bacon, drain on kitchen paper and keep warm.
Meanwhile, whisk together the dressing ingredients in a bowl with 1 tablespoon of cold water and season to taste.
Halve, stone, peel and slice the avocados into thick slices on the diagonal.
Place the lettuce into a large salad bowl and toss through the dressing. Scatter the avocado slices, hot bacon pieces and croutons over the salad, toss again and serve immediately.
