• 200g unsalted butter
• 1 litre whole milk
• 200g cane sugar
• Zest of whole lemon
• 125ml vanilla syrup
• 150g semolina
• 4 cinnamon sticks
• 4 eggs
• 250g filo pastry

Method:
For the filling, melt most of the butter and add the milk. Bring the mixture to the boil while adding 100ml vanilla syrup and the semolina, constantly stirring until just peaking, then take it off the heat and add the eggs. Keep stirring until mixed well.
Using the rest of the butter brush the baking tray then add a thin layer of pastry, brush the pastry and add another layer. Repeat the process until half full, then add the filling and repeat the layers of pastry. Bake in a 200˚C oven for 45 minutes until golden brown.
For the syrup, place a litre of water in a large pan with the cane sugar, lemon zest, cinnamon sticks and 25ml vanilla syrup. Boil the mixture and reduce it down to ½ litre. Cool it down and then pour it over the pastry. Serve with vanilla ice cream.
