Toffee Bananas

Ingredients (Serves 4):


• 1 egg white
• 4 bananas
• 100g self-raising flour
• 1 tbsp sunflower oil plus oil for frying
• 100g granulated sugar

Method:


Place the flour in a mixing bowl and make a well in the centre.

Mix 1 tbsp oil with 150ml cold water and gradually beat into the flour until smooth and batter like.

Whisk the egg white in a clean grease free bowl until it forms soft peaks.

Whisk a spoonful of egg white into the batter then fold in the remainder.

Peel the bananas, break each into 3 short lengths and drop into the batter, stirring until coated.

Heat 1cm of oil in a large deep frying pan until a little of the batter sizzles when dropped in.

Add the bananas a few pieces at a time and fry for 3-4 minutes until golden, turning halfway.

Heat the sugar in a frying pan over a high heat until all the sugar has dissolved and turned a caramel colour.

Remove from the heat immediately and drizzle over the battered bananas.
